
Does Refrigeration Kill Bacteria, or Just Slow It Down?

Short answer: no, your fridge isn't killing anything. It's just telling bacteria to slow down.
That's an important difference, and it's the reason leftovers still go bad even when they've been in the fridge the whole time, and why "it was in the fridge, it should be fine" isn't always true. Here's what's actually happening, and what it means for how you store and reheat food.
Bacteria need warmth to grow and multiply, and they do it fastest between about 40°F and 140°F (4°C to 60°C). Food safety experts call this range the "danger zone," because it's where bacteria can double in number in as little as 20 minutes.

A refrigerator keeps food below that zone, usually around 37–40°F (3–4°C). At that temperature, most bacteria slow down dramatically. Their internal processes need warmth to run efficiently, so cold just makes everything happen much, much slower.
But slower isn't the same as stopped. Some bacteria, like Listeria, are built to keep growing even in a cold fridge, just at a much slower pace. That's exactly why deli meats and soft cheeses (foods Listeria likes) still carry a "use by" date even when refrigerated the entire time.

Freezing does a better job than a fridge, but it still isn't a kill switch. At 0°F (-18°C), bacteria stop growing almost entirely. They go dormant, like they're paused. But the moment food thaws and warms back into the danger zone, any bacteria that were there before freezing wake back up and start growing again right where they left off.
So freezing is great for pausing the clock. It just doesn't reset it.

Heat does. Cooking food to the right internal temperature is really the only common kitchen method that kills bacteria outright, rather than just slowing them down.
That's also why the two-hour rule matters so much: the longer food sits in the danger zone before it's chilled or cooked, the more bacteria build up. And once bacteria have multiplied enough, cooking can kill the bacteria itself but may not remove toxins some of them already released into the food. A few types of bacteria, like Staphylococcus aureus, produce toxins that survive normal cooking and reheating temperatures, even after the bacteria themselves are dead.
Does putting bacteria in the fridge eventually kill it? No. Refrigeration slows bacterial growth but doesn't kill bacteria, even after a long time in storage. Some types will keep growing very slowly the entire time.
Does freezing kill bacteria? No. Freezing makes bacteria dormant rather than killing them. Once food thaws, any bacteria present can start growing again.
How long can food safely sit in the fridge? Most cooked leftovers are recommended for 3–4 days in the fridge. Raw meat, poultry, and fish are typically fine for 1–2 days before cooking.
If I reheat food thoroughly, is it always safe again? Reheating to 165°F (74°C) kills live bacteria, but it won't destroy toxins that some bacteria, like Staphylococcus aureus, may have already released into the food. This is why food left out too long can still be unsafe even after reheating.
Why does some food in the fridge still go bad quickly? Certain bacteria, like Listeria, can grow slowly even at refrigerator temperatures. Foods like deli meat, soft cheese, and pre-cut produce are especially prone to this, which is why they carry shorter use-by windows.
